Lobster Salad in 15 minutes

Ingredients: A lettuce, an 800g lobster, two salad tomatoes, a beetroot, a lemon, an orange, four radishes, an endive, a cucumber and two boiled eggs.

Preparation: Precook the lobster with plenty of salt. Allow to cool and cut the body into strips of around 0.5cm wide. Dice the lettuce. Place the lettuce in the middle of a dish and place the lobster on top. Decorate the edge with tomato wedges, sliced beetroot, orange segments, thinly sliced radish, endive leaves crowning the lettuce, sliced cucumber and the boiled quartered eggs on top of the endives. Dress with a vinaigrette or, if preferred, mayonnaise and cocktail sauce. Bon appétit! 
 

TIP FROM OUR CHEF

Simple, light and refreshing, the chicken salad with grapes may be served on a toast, or in a bed of various lettuces and trimmed with small slices of radishes. It is ideal for a summer day with a strawberry juice
with natural lemon and ginger.  

Ingredients: 600gr of chicken breast cooked and cut into cubes, 100gr in stalks of celery cut into thin pollock, 1.5 dl of soya cream, 1dl of mayonnaise, lemon juice, 10gr of  chopped chives, 200gr of grape without skin and without seeding, 30gr of radishes, salt and fresh pepper mill, 1 pinch of medium curry of Madras, 300gr of various lettuces.

Preparation: In a bowl involve the chicken cubes with celery cut into pollock. Always stirring, add the mayonnaise, the cream, the lemon juice, salt and pepper and a pinch of curry. Then it is mixed with the grape and the chives. With a spoon, put a good portion on a toast and put it in a dish covered with lettuce. Put some small slices of radish cut very thin, for decoration (Calories per person: 380, approximately).
