The Hotel Quinta da Marinha Resort has a “Chef Herb Garden”, which supports the restaurants of the resort: Rocca, Five Pines and Monte Mar.
Accordingly to the Chef  there are many advantages with this kind of space. The “Chef Herb Garden” products are high quality and make a stand for its freshness, as they are biologic and grown in the property. They also allow, based on their availability and season, to create new plates and combinations.
This concept is also very pedagogic as it decreases salt intake which is replaced by “Chef Herb Garden” products.

These kind of spaces are common to Onyria Group philosophy; lifestyle and quality of living.

Some of herbs that can be found at “Chef Herb Garden”:

  • Basil - Used fresh gives a distinguished flavor to sauces, fish and meat plates, chicken, seafood, pasta and salads.
  • Oreganno - Typical Italian herb, used in the Italian cuisine and great combination for grilled meat, chicken, salads, eggs and cheeses.
  • Coriander - Used in many typical Portuguese recipes, fresh or in seeds. Matches perfectly with fish, seafood, salads, sauces and soups.
  • Thyme - Rich flavor, used in marinates, potatoes, seafood salads.
  • Tarragon - Used fresh or dry, strongly flavored. In small portions in sauces, soups, eggs and seasonings.
  • Mint - Used in the Arabian cuisine, in sauces, meat, fruit, salads, juices and tea.
